Chicken risotto to hinterland style
Rice with free-range chicken and mineira home-made sausage; accompanied by sautéed kale, surprise beans, baked plantain, and red- chili jam.
“A traditional hinterland dish from Goiás and Minas Gerais that usually brings family and friends together to either a table or to outdoor gatherings by waterfalls on Sundays. We used to call it risotto, but I have decided to rename it with its true name. It is made of rice, free-range chicken and home-made sausage from Minas. I dared creating a more complete and sophisticated version, adding green kale ( sautéed to the Minas Gerais style), baked plantain, red chili (strongly typical of Latin America) and the “surprise beans”, which is a fusion of our tropeiro (typical of the Rio Grande do Sul) and the French cassoulet.”
