Lamb shoulder, slowly braised in its sauce. Accompanied by “canjiquinha mineira” *, crunchy sweet potato and preserve of purple cabbage, green apple and raisins.
“The lamb shoulder blade is roasted in rock salt and comes with a typical mineira dish: the so called canjiquinha. From African slaves´cuisine and taking different ways of preparation, the canjiquinha is a legacy from colonial times in Minas.”
* Canjiquinha mineira: a porridge-like dish made of mill-processed corn.
